Canet Musician: MOZART

Canet Estate in the Tarrazu region is known for two things: coffees named after classical musicians and innovative processing techniques. 

Mozart is remarkable for its hybrid H1 variety and Raisin Honey Process, and we're not kidding when we say this coffee sings!

In the Raisin Honey technique, coffees undergo two fermentation phases. First, whole cherries are dried on raised african beds for three days, much like a natural process. This step also strengthens and concentrates the fruit's pulp, as the cherries dry out into 'raisins'.

In the next step, the partially-dried fruit is depulped down to the mucilage layer. More fermentation takes place as the coffee is carefully dried to the target moisture for dry-milling and storage.

The result of this fussy process? A coffee that's exceptionally sweet with complex flavors, balanced acidity, and a rich, decadent mouthfeel!
